All honey will eventually crystalize. This does not mean it's "gone bad". Just gently warm it until it liquifies again and continue to use. Or scoop it up and use it in your tea or coffee, or spread on your toast. Whatever you do, just don't throw it away! Creamed honey, however, should be kept cool (refrigerated or room temperature of 68-72 is ideal) or it will re-liquify. Once re-liquified, it will still be delicious, just not creamy anymore.
