All honey will eventually crystalize. This does not mean it's "gone bad". Just gently warm it until it liquifies again and continue to use. Or scoop it up and use it in your tea or coffee, or spread on your toast. Whatever you do, just don't throw it away! Creamed honey, however, should be kept cool (room temperature of 68-72 is ideal, or you can refrigerate if you like a firmer consistency). If allowed to get too warm, it will re-liquify. Once re-liquified, it will still be delicious, just not creamy anymore.
